Mediterranean Stuffed Bell Peppers

Follow the steps below to cook the desired recipe

1. 1. Preheat the oven to 375°F (190°C).

2. 2. Cut the tops off the bell peppers and remove the seeds and membranes.

3. 3. In a large bowl, mix together cooked black beans, diced roma tomatoes, crumbled feta cheese, chopped porcini mushrooms, and diced extra firm tofu.

4. 4. Add salsa, rice wine vinegar, and fresh lime juice to the mixture and stir well.

5. 5. Fill each bell pepper with the Mediterranean filling mixture.

6. 6. Place the stuffed bell peppers on a baking sheet and bake in the preheated oven for 25-30 minutes, until the peppers are tender and the filling is heated through.
