2. 2. Wash and scrub the baking potatoes, then pierce them with a fork several times. Place the potatoes on a baking sheet and bake for 45-60 minutes, or until tender.

3. 3. In a skillet, cook the bacon until crispy. Remove from the skillet and set aside on paper towels to drain.

4. 4. In the same skillet, add balsamic vinegar and bring to a simmer. Allow it to reduce and thicken slightly, about 5-7 minutes.
