Delicious and tangy coconut lemon bars with a gluten-free crust

1. 1. Preheat the oven to 350°F (180°C) and grease a baking dish.
2. 2. In a mixing bowl, combine gluten-free flour, brown sugar, xanthan gum, baking powder, and cinnamon. Mix well.
3. 3. Add olive oil to the flour mixture and mix until crumbly. Press the mixture into the bottom of the greased baking dish to form a crust.
4. 4. In another bowl, whisk together eggs, cane sugar, lemon extract, and orange juice until well combined.
5. 5. Pour the lemon mixture over the crust in the baking dish.
