2. Meanwhile, boil the potatoes in a large pot of salted water until they are soft. Drain and mash with a potato masher or fork.

3. Add milk, butter, salt and pepper to the mashed potatoes and mix until creamy.

4. In a separate pan, heat some oil over medium-high heat and add the spinach. Cook for 3-4 minutes until wilted.

5. Add the spinach to the mashed potatoes and mix until combined.
