1. In a bowl, marinate the chicken with some fish sauce, chopped ginger, turmeric, and lemongrass.

2. Heat some oil in a pan and fry the marinated chicken until cooked through. Set aside.

3. In the same pan, sauté the onions, chopped ginger, and chopped lemongrass until softened.

4. Add the bok choy and peas and stir-fry until cooked.

5. Add the bean sprouts and stir-fry briefly.
