Delicious and fluffy spinach pancakes topped with a sweet apple compote

Follow the steps below to cook the desired recipe
1. In a mixing bowl, combine 1 cup of all-purpose flour, 1 cup of 1% milk, 1 tablespoon of apple cider vinegar, and 1/2 cup of applesauce. Mix until well combined. Fold in a handful of baby spinach leaves into the batter.
2. Heat a non-stick pan over medium heat and lightly grease it with cooking spray. Pour 1/4 cup of the pancake batter onto the pan and cook until bubbles form on the surface. Flip the pancake and cook for another minute or until golden brown.
3. Repeat with the remaining batter to make more pancakes.
4. In a saucepan, heat some applesauce with diced apples until the apples are soft and caramelized. Serve the spinach pancakes topped with the warm apple compote.
