1. Chop the potatoes, onion and ginger into small cubes.
2. Heat oil in a large pot over medium heat.
3. Add the chopped potatoes, onion and ginger. Saute until the vegetables are lightly browned.
4. Add the carrots and chicken. Stir to combine.
5. Add water to cover the ingredients. Bring to a boil, then reduce heat and simmer for 20 minutes.
