1. Cook the basmati rice according to package instructions.
2. Meanwhile, dice the chicken breast into small pieces and season with salt and pepper.
3. Heat a large skillet over medium-high heat and add olive oil. Once hot, add the chicken and cook until browned on all sides, about 5-7 minutes.
