Carrot and Mashed Potato Casserole
This comforting casserole layers sweet, tender carrots beneath a creamy blanket of mashed potatoes, then bakes until lightly golden and bubbling at the edges. It’s a simple, satisfying main dish with a rustic look and a naturally cozy, home-cooked flavor.

Follow the steps below to cook the desired recipe
1. Step 1: Preheat the oven to 190°C (375°F) and lightly grease a medium casserole dish with butter or oil.
2. Step 2: Bring a pot of salted water to a boil, add the sliced carrots, and cook for 8-10 minutes until just tender. Drain well.
3. Step 3: In a skillet, melt the butter over medium heat. Add the onion and cook for 4-5 minutes until soft, then stir in the garlic and cook for 30 seconds.
4. Step 4: Add the cooked carrots to the skillet, season with salt, black pepper, and thyme, and toss well so the carrots are evenly coated.
5. Step 5: Spread the carrot mixture evenly in the bottom of the prepared casserole dish.
6. Step 6: Stir the milk or cream into the mashed potatoes until smooth and fluffy, then spoon the potatoes over the carrots and spread into an even layer.
7. Step 7: Sprinkle the grated cheddar and breadcrumbs over the top for a golden finish.
8. Step 8: Bake for 20-25 minutes, until the casserole is hot throughout and the top is lightly browned.
9. Step 9: Let it rest for 5 minutes before serving, then garnish with chopped parsley.
