1. Wash and pat dry the chicken breasts.
2. Slice the tomatoes and slice the mushrooms.
3. Cut open the chicken breasts without completely splitting them to form a pocket.
4. Place tomato slices and mushroom slices into the pockets of the chicken breasts.
5. Season the chicken breasts with salt and pepper.
6. Heat a pan and add some oil.
7. Place the stuffed chicken breasts in the pan and cook until golden brown on both sides.
8. Meanwhile, wash and chop the lettuce.
