Vegetarian Red Bean Lasagna

This vegetarian lasagna is a hearty and flavorful main dish made with red beans, zucchini, corn, and a variety of seasonings.

1. Preheat oven to 375°F.

2. In a large skillet, heat olive oil over medium heat. Add garlic and cook until fragrant.

3. Add diced tomatoes (undrained), red beans (drained and rinsed), zucchini (sliced), corn (frozen or canned), paprika, salt, and black pepper. Cook until vegetables are tender.

4. In a baking dish, layer lasagna noodles, vegetable mixture, and shredded cheese. Repeat layers until all ingredients are used up, ending with a layer of cheese on top.

5. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10-15 minutes or until cheese is melted and bubbly.

6. Let cool for a few minutes before serving.
