1. Peel and grate the ginger.
2. In a saucepan, combine the grated ginger, sugar, and water.
3. Bring to a boil over medium heat, stirring until the sugar has dissolved.
4. Remove from heat and let the ginger mixture steep for 30 minutes.

6. Let the ginger syrup cool completely.
