Plantain Pecan Cake
A tender, warmly spiced dessert cake that transforms ripe plantains into a moist treat studded with crunchy pecans.

Follow the steps below to cook the desired recipe
1. Preheat the oven to 350°F (175°C) and lightly grease an 8-inch square baking pan.
2. Peel the plantains and mash them until mostly smooth with a few small lumps remaining.
3. In a bowl, whisk together the cake flour, baking powder, cinnamon, and a pinch of salt.
4. Stir the mashed plantains into the dry ingredients, then mix in a little sugar and enough water or milk as needed to form a thick batter.
5. Fold in the chopped pecans, reserving a small handful for the top if desired.
