A delicious and hearty soup made with red lentils, potatoes, parsnips, and curry powder.

Curried Lentil Soup

Follow the steps below to cook the desired recipe

1. Heat some olive oil in a large pot over medium heat.

2. Add the chopped onions and sauté until they become translucent.

3. Stir in the curry powder and cook for another minute.

4. Add the diced potatoes, parsnips, and red lentils to the pot.

5. Pour in the vegetable stock and bring to a boil.

6. Reduce heat to low, cover the pot, and simmer for about 20-25 minutes or until the lentils and vegetables are tender.

7. Using an immersion blender, puree the soup until smooth. If you don't have an immersion blender, you can transfer the soup to a blender in batches and blend until smooth.

8. Return the soup to the pot and stir in the soy milk. Heat gently until warmed through.

9. Season with salt and pepper to taste.

10. Serve hot and enjoy!
